The stock for the seafood congee is made of lots of dried bonito flakes cooked in a big pot to which fresh seafood, like squid, shrimp, crab and oyster are added. When the seafood soup is done, it is poured onto a bowl of cooked rice topped with fried garlic and some cel-ery and seasoned with black pepper. Voila! An authentic seafood congee is ready to be served!
