The founder of Jinde spring rolls is Mr. Li Jin-de, who had a food stall on Gongsing Street near the Minzu night market (previously on the Yongle Street) in 1951. Mr. Li used to sell cold drinks, but considering the demand for spring rolls during the Tomb Sweeping Festi-val, he opted to sell spring rolls, a refreshing snack, instead. He moved to the current loca-tion in 1966. His son Mr. Li Guo-ming joined the business in 1971, taking over the running of the stall officially in 1991. The third generation, Ms. Li Yi-ying and Ms. Li Yi-han also joined this family business. The spring rolls made here is pan-fried and its filling is made of cabbage, shrimp, meat, dried tofu, egg, beans, garlic, coriander, peanut powder and sugar.
